Rosehip & Raspberry Bellini Recipe

Our variation of the Bellini cocktail is a simple and delicious drink that makes great use of the seasonal ingredients that summer brings us. This drink has featured on the menu at 69 Colebrooke Row during the summer months. Rosehips are quite nostalgic for us, they remind us of childhood memories, when we had rosehip jams, syrups and cordials.We forage for rosehips along the canal near to Drink Factory. We dry the rosehips and combine these with raspberries to produce a home made syrup. We pour the syrup into the cocktail tin, top with Prosecco. We always make sure that we stir slowly so to protect the bubbles in the Prosecco.
