Making a three course dinner for an anniversary, need help with the cocktails!
Tl;Dr: at the end.So I'm making a very important dinner for me and my SO. This post will be a bit long with extra details explaining why I'd like to make him a drink.He is very particular about drinks.His favorite cocktail/mixed drink is a regular rum and coke.I'd like to make him something else he can try that is similar in distribution of alcohol (you can't super taste the alcoholic flavour [he describes it as the "rubbing alcohol" taste] in a rum and coke), but need suggestions!The reason I want to make him something is because I'm doing a three course formal meal all made from scratch, and it would seem incomplete without drinks. (He does not like wine).So, if you could suggest to me a cocktail that you can't taste/masks the "alcoholic" fermented flavour in, that plays up the caramel/spiced/or natural flavours of rum or a similar alcohol, I would love it!Here are the guidelines set by his personal taste:not spicy (as in hot)must be sweet or mask the bitterness/dryness of the alcoholcan't be "too girly" (although he likes girly drinks, so do suggest them and I will just change the presentation)no tropical fruit flavours (pineapple, coconut, mango)Here are the dinner courses to match the drink to:Starter:Cesar salad with dressing made from scratch with fresh anchoviesMain:Adobo style slow cook chicken, with Onion bruchetta. Sides of honey carmalized carrots, and garlic mashed potatoes.Dessert:Marble lava cake with chocolate ganache, chocolate shavings, and cool whip (a favorite topping of his).So as you can probably tell from the courses as well, he is a very plain guy, and I've tried to spice up regular dishes to make them a bit fancier for him. I would love to do this in a Cocktail for him as well.
