For most mixed drinks, and some cocktails I think pour count is OK (especially if I'm busy), but for the most part I feel like I really should measure every drink.
I had someone make me a last word with really expensive green chartreuse the other night and they pour counted everything... I was very displeased. Also, was training a guy and he pour counted a quarter ounce of simple, and I was just like come on man, that could be like a half ounce and you'd have no idea. That quarter ounce makes a huge difference.
