I'm fortunate enough to live near a store that sells whole kaffir limes (in most parts of the US, you can only get the leaves) for cheap, and I have some right now. The zest is totally unlike regular lime zest; it's much more fragrant, funkier, and spicier. I was thinking of making a syrup out of the zest using this method, but I have no idea what kind of cocktail I can make using lime oleo saccharum. Anybody have any ideas?
