Blazers, looking for info on percentage alcohol loss...

The bar i work at has a fairly large list however one staple drink we make is a rum blazer in honour of us being a swiss coffee house founded in the 60's. Now, somebody always makes a snarky remark about us burning off all the alcohol in their drink. I know this isnt exactly the case as the style of beverage has been around since the 30's if not before and ive drunk plenty myself.What im looking for is a resource that provides some evidence, facts or stats i can quote to customers while preparing the drink. The more scientific in nature the merrier. Can anybody provide me with such? id be very grateful.
