I'm in charge of coming up with a cocktail menu for a new steakhouse. Need some help!

Hi all,I work for a liquor distributor and I'm in charge of coming up with some cocktails for a new steakhouse opening up. The owner is looking to put classic cocktails on the menu but he wants to add some sort of twist. Does anybody have any suggestions?Thanks!

  1. Have you thought of using fat washes? Id imagine you have a good supply of fresh fat from the kitchen in a stake house. Bourbon fat washes work really well with straight and rye, Iv had some great results from a bacon washed manhatten but youd need to experiment with different fats and quantities, I found pure bacon fat was too salty but add 40% goose fat to 60% bacon and it kept the bacon notes without the salt.
