Japanese cocktails only using sake

Hello /r/cocktails!So I was wondering what experience everyone has using sake for a cocktail mixing (not using an high proof alcohol) and what you would suggest?I know okunomatsu makes a high proof genshu sake (24%) that would be good for a cocktail to give it an kick but for now I am restricted with a beer/wine license and wanted to hear from you guys what ideas you would have!
