Menu for Launch Party. Opinions?

Help me out /r/cocktails! I'm throwing a launch party for my mobile bar in an Airstream in two weeks. Here's the tentative menu. Please tell me what's missing, what I should cut, etc. Because water is impractical, I cannot shake/stir on board, but I can do shaken cocktails in a keg (it's better than actual shaking) and stirred drinks in bottles. I also can carbonate and serve bubbly cocktails on draft. I can do built drinks, hot drinks (in a crock pot), and drinks in an ISI. I have 6 taps to work with.The Taps1. Home made ginger beer on draft. For this I will put on the menu the following Mules:Moscow (Vodka)Brown butter dark and stormy (brown butter-washed dark rum)Orchard (Peach-infused bourbon)Applejack (Laird's and ginger beer is about the best thing in the universe.)Fernet (For all my USBG homies)2. Tonic on draft (for mixing with vodka, gin, etc.)3.Paper Plane (bourbon, nonino, aperol, lemon)4.Serrano margarita (tequila, lime, cointreau, serrano tincture)5. Chartreuse and rootbeer. (Bubbly, served on draft.)6. Local Octoberfest beer.In the ISI:Ramos fizz with bourbon barrel gin.Hot:Brown butter rum, cider, Ango, cinnamon. Topped with caramel foam from another ISI.Stirred and bottled:Plum Old Fashioned. Plum-infused rye, coriander syrup, bitters.Barrel Aged Byrrhgoni: Gin, Byrrh, Vermouth, Orange bitters. Barrel aged.A Date with Rob Roy: Date-infused Monkey Shoulder, Vermouth, Aromatic BittersSuggestions?
