Tasked with revamping a menu

Hi hivemind. I was recently asked by a local restaurant to come up with some appropriate cocktails for their new menu, and I, naturally, thought that the good people here at /r/Cocktails would be the perfect help in doing so. They've asked to keep them simple and in line with the cuisine of a modern French restaurant.Here's the current menu. Of these, the French 75, Kir Royale, Noir Sour, and Vieux Carre will remain. Also the management has agreed to promote Kraken Rum and Cutty Sark Prohibition Edition.No big deal, eh?So yeah, any recipe suggestions you might think of would be totally welcome, greatly appreciated, and would earn my eternal gratitude**Gratitude not guaranteed for eternity.
