Wine infusions?

My wife saw a bottle of wine at a wine festival where they had put a chili pepper in a bottle of sweet white wine to add a spicy kick to it. She wants to try and do this at home, but I told her that I'm afraid the wine will start to go bad as soon as we open it and add the pepper. We could use our vacuum stopper in it, but that doesn't really help if we plan to give away bottles for the holidays.Anybody have any experience or ideas?
